Slow Roasted Pork Belly with Red Onions & Fennel

2-3kg Torre Butchers Pork Belly
2 red onions
1 bunch fennel
3-4 cloves garlic
2-3 tbl Fini Olive Oil
Maldon Sea Salt and cracked black pepper to taste

Preheat oven to 220 degrees. Finely slice red onions and fennel, lay in a baking dish top with olive oil salt pepper and 3 of 4 cloves of garlic. Make sure Pork Belly skin is dry, sprinkle with Maldon Sea Salt and a little olive oil, place pork belly in baking dish. Place in oven for 20 minutes, turn heat down to 160 degrees and cook for 4 hours. Fennel and Red Onion can be served as a pureed side dish
